With over 80 years of combined experience Alan and Gabrielle have well deserved international reputations; as artisan cheese makers, having trained and judged many others. They’re 1 of only 3 accredited RAW milk cheese producers in New Zealand!
Gabrielle, learning her craft in France, went on to adapt methods to Australian conditions. Banning fertilisers and chemicals on her farm and breeding her own goats she went on to become the top goats cheese maker in Australia with her own brand, Kervella Cheese winning the best overall Australian cheese award three times.
Alan, an engineer, dairy technologist and raw milk cheese consultant for 20 years in South Africa also with animal husbandry experience has worked with the process right the way through. He worked to design and build their bespoke and sustainable factory from scratch using home-made designs, some of which he has since patented.
